Ingredients

  • 1 pound Ground beef
  • 1 cup Diced onion
  • 3 cloves Minced garlic cloves
  • 1 medium Jalapeño, finely diced
  • 2 tablespoons Taco seasoning
  • 1 can Diced tomatoes with green chilies (e.g., Rotel)
  • 1 can Black beans, drained and rinsed
  • 1 cup Frozen corn
  • 6 Flour tortillas
  • 2 cups Shredded Mexican blend cheese
  • 0.25 cup Fresh cilantro, chopped
  • 0.5 cup Sour cream (for serving)
  • 0.25 cup Sliced green onions (optional garnish)

Directions

Step 1

Preheat your oven to 375°F (190°C). Grease a 9x13 baking dish and set aside.

Step 2

In a large skillet over medium-high heat, add the ground beef and cook until browned, breaking it up with a spoon, about 5-7 minutes. Drain excess fat.

Step 3

Add the diced onion and jalapeño to the skillet. Sauté for 2-3 minutes until softened. Stir in the minced garlic and cook for 30 seconds until fragrant.

Step 4

Sprinkle the taco seasoning over the beef mixture and stir to coat evenly. Add the diced tomatoes with green chilies (including the liquid), black beans, and frozen corn. Stir to combine and simmer for 5 minutes until heated through.

Step 5

Place two flour tortillas at the bottom of the prepared baking dish, tearing them into pieces to cover the surface evenly.

Step 6

Spread 1/3 of the beef mixture over the tortillas, followed by 1/3 of the shredded Mexican blend cheese. Repeat this process two more times to create three layers, ending with a final sprinkle of cheese on top.

Step 7

Cover the dish with aluminum foil and bake in the preheated oven for 20 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.

Step 8

Remove the taco bake from the oven and let it cool for 5 minutes. Sprinkle chopped cilantro and sliced green onions (if using) over the top.

Step 9

Slice into squares and serve warm with a dollop of sour cream on the side. Enjoy!
