Ingredients

  • 3 tablespoons unsalted butter
  • 1 medium yellow onion, diced
  • 2 cloves garlic, minced
  • 3 medium russet potatoes, peeled and cubed
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 cups whole kernel corn, drained
  • 1 cup canned creamed corn
  • 1 4-ounce can green chilies, diced
  • 6 slices bacon, cooked and crumbled
  • 1.5 teaspoons salt
  • 0.5 teaspoon black pepper
  • 1 cup sharp cheddar cheese, shredded
  • 2 tablespoons fresh parsley, chopped (optional garnish)

Directions

Step 1

In a large pot, melt the butter over medium heat. Add the diced onion and cook for 4-5 minutes until softened.

Step 2

Stir in the minced garlic and cook for an additional 1 minute until fragrant.

Step 3

Add the cubed potatoes and chicken broth to the pot. Bring to a boil, then reduce the heat to a simmer. Cover and cook for 15 minutes, or until the potatoes are tender.

Step 4

Using a potato masher or the back of a spoon, roughly mash some of the potatoes in the pot to help thicken the chowder. Leave some chunks for texture.

Step 5

Stir in the heavy cream, whole kernel corn, creamed corn, and diced green chilies. Simmer for 10 minutes, stirring occasionally.

Step 6

Add the crumbled bacon, salt, and black pepper, and mix well.

Step 7

Reduce the heat to low and stir in the shredded cheddar cheese until it is fully melted and incorporated into the chowder.

Step 8

Taste and adjust seasoning as needed. If the chowder is too thick, thin it out with a little additional chicken broth or cream.

Step 9

Ladle the chowder into bowls and garnish with fresh parsley if desired. Serve hot with crusty bread or crackers on the side.
