  • 14.5 ounces canned diced tomatoes (with juice)
  • 4 cups beef broth
  • 2 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon dried thyme
  • 1 cup frozen green beans
  • 1 cup frozen corn
  • 2 tablespoons fresh parsley, chopped (optional, for garnish)

Directions

Step 1

In a large pot or Dutch oven, heat olive oil over medium heat. Add the ground beef and cook until browned, breaking it apart with a spoon. Once browned, drain off excess fat and set the beef aside.

Step 2

Using the same pot, add the diced onion and minced garlic. Sauté for 2-3 minutes until softened and fragrant.

Add the carrots, celery, and potato to the pot. Stir and cook for another 5 minutes.
