  • 1.5 pounds bone-in, skinless chicken breasts (or thighs)
  • 4 cups chicken broth
  • 3 15-ounce cans canned white beans (Great Northern or Cannellini), drained and rinsed
  • 2 4-ounce cans canned green chilies, diced
  • 2 tablespoons fresh lime juice
  • 0.25 cup fresh cilantro, chopped (optional for garnish)
  • 0.5 cup sour cream (optional for serving)
  • 1 cup shredded Monterey Jack cheese (optional for serving)

Directions

Step 1

Heat the olive oil in a large pot or Dutch oven over medium heat.

Step 2

Add the diced onion, garlic, green bell pepper, and jalapeño (if using). Sauté for 5-7 minutes, or until the vegetables are softened and fragrant.

Step 3

Sprinkle the cumin, chili powder, oregano, smoked paprika, salt, and pepper over the vegetables. Stir and toast the spices for about 1 minute.

Step 4

Add the chicken breasts to the pot and pour in the chicken broth. Bring the mixture to a boil, then reduce the heat to low and cover. Simmer for 20-25 minutes, or until the chicken is fully cooked and tender.
