Ingredients

  • 4 links Italian sausage (mild or spicy)
  • 1 Red bell pepper
  • 1 Green bell pepper
  • 1 Yellow bell pepper
  • 1 Large yellow onion
  • 3 Garlic cloves
  • 2 tablespoons Olive oil
  • 14.5 ounces Canned diced tomatoes
  • 2 tablespoons Tomato paste
  • 1 teaspoon Sugar
  • 1 teaspoon Dried oregano
  • 1 teaspoon Dried basil
  • 0.5 teaspoon Crushed red pepper flakes (optional)
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Fresh parsley (for garnish)

Directions

Step 1

Slice the red, green, and yellow bell peppers into thin strips. Peel and thinly slice the onion. Mince the garlic cloves.

Step 2

Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the sausage links and cook until browned on all sides, about 8-10 minutes, turning occasionally. Remove the sausages from the pan and set aside on a plate.

Step 3

In the same skillet, add the remaining 1 tablespoon of olive oil. Add the sliced onions and bell peppers. Sauté for 5-7 minutes, or until the vegetables are tender and slightly caramelized.

Step 4

Add the minced garlic to the skillet and cook for 1 minute, stirring frequently to prevent burning.

Step 5

Stir in the canned diced tomatoes and tomato paste. Add the sugar, oregano, basil, crushed red pepper flakes (if using), salt, and black pepper. Stir until the sauce is well combined.

Step 6

Slice the cooked sausages into 1-inch pieces and return them to the skillet. Stir to combine with the sauce and vegetables.

Step 7

Lower the heat to a simmer and cover the skillet. Let the mixture cook for 10-12 minutes, allowing the flavors to meld and the sausages to cook through completely.

Step 8

Taste and adjust seasoning, if necessary. Garnish with freshly chopped parsley before serving.

Step 9

Serve hot with crusty bread, over pasta, or on a hoagie roll for a sausage and pepper sandwich.
