Ingredients

  • 4 pieces flour tortillas
  • 2 cups shredded cheddar cheese
  • 1 cup shredded cooked chicken (or your choice of protein)
  • 1 medium bell pepper (diced)
  • 0.5 medium red onion (diced)
  • 2 tablespoons butter or cooking oil
  • 0.5 cup cooked black beans (optional)
  • 2 tablespoons chopped cilantro (optional)
  • 0.5 cup salsa (for serving)
  • 0.5 cup sour cream (for serving)
  • 0.5 cup guacamole (for serving)

Directions

Step 1

Heat a large skillet over medium heat and add 1 tablespoon of butter or cooking oil.

Step 2

Place one flour tortilla in the skillet and sprinkle 1/2 cup of shredded cheddar cheese evenly over one half of the tortilla.

Step 3

Add 1/2 cup of shredded cooked chicken, a handful of diced bell peppers, and a sprinkle of diced red onion on top of the cheese.

Step 4

For extra flavor, optionally add 1/4 cup of cooked black beans and a pinch of chopped cilantro.

Step 5

Fold the tortilla in half, covering the filling, and press gently with a spatula to hold it together.

Step 6

Cook for 2-3 minutes on one side, until the bottom is golden brown and crispy. Carefully flip the quesadilla and cook for another 2-3 minutes until the cheese is melted and the second side is golden brown.

Step 7

Remove the quesadilla from the skillet and transfer it to a cutting board. Repeat the process with the remaining tortillas and filling ingredients.

Step 8

Slice each quesadilla into wedges and serve immediately with salsa, sour cream, and guacamole on the side.
