Ingredients

  • 1.5 lbs Ground beef
  • 0.5 lbs Ground pork
  • 1 cup Breadcrumbs
  • 0.5 cup Milk
  • 2 large Eggs
  • 0.5 cup Grated Parmesan cheese
  • 0.5 cup Grated mozzarella cheese
  • 2 tbsp Fresh parsley, chopped
  • 3 cloves Garlic, minced
  • 1 medium Onion, finely diced
  • 1 tsp Dried oregano
  • 1 tsp Dried basil
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 1.5 cups Marinara sauce
  • 1 tbsp Olive oil

Directions

Step 1

Preheat your oven to 375°F (190°C). Lightly grease a large loaf pan or line it with parchment paper for easy removal.

Step 2

In a small bowl, mix the breadcrumbs and milk. Let the mixture sit for 5 minutes to soften.

Step 3

In a large mixing bowl, combine the ground beef, ground pork, soaked breadcrumb mixture, eggs, Parmesan cheese, mozzarella cheese, parsley, garlic, onion, oregano, basil, salt, and black pepper.

Step 4

Using clean hands or a large spoon, mix the ingredients until just combined. Avoid overmixing to keep the meatloaf tender.

Step 5

Transfer the meat mixture to the prepared loaf pan, pressing it gently to shape it evenly.

Step 6

In a small bowl, mix 1 cup of marinara sauce with the olive oil. Spread this mixture evenly over the top of the meatloaf as a glaze.

Step 7

Place the loaf pan in the preheated oven and bake for 55-60 minutes, or until the internal temperature reaches 160°F (71°C).

Step 8

If desired, during the last 5 minutes of cooking, spread an additional 1/2 cup of marinara sauce over the top for extra flavor.

Step 9

Remove the meatloaf from the oven and let it rest for 10 minutes before slicing. This helps retain moisture and makes slicing easier.

Step 10

Serve warm with your favorite sides, such as roasted vegetables, mashed potatoes, or a fresh salad.
