Ingredients

  • 1.5 cups pumpkin puree
  • 2 cups whole milk
  • 0.75 cups granulated sugar
  • 3 tablespoons cornstarch
  • 1 teaspoon ground cinnamon
  • 0.25 teaspoons ground nutmeg
  • 0.25 teaspoons ground ginger
  • 0.25 teaspoons salt
  • 1 teaspoon vanilla extract
  • 1 cup whipped cream
  • 0.5 cup crushed gingersnap cookies (optional, for garnish)

Directions

Step 1

In a medium saucepan, combine the pumpkin puree, whole milk, and granulated sugar. Place the saucepan over medium heat and whisk continuously until the sugar dissolves completely.

Step 2

In a small bowl, mix the cornstarch with 3 tablespoons of cold water to create a slurry. Make sure there are no lumps.

Step 3

Slowly add the cornstarch slurry to the saucepan while whisking. Continue whisking until the mixture begins to thicken, about 3-5 minutes.

Step 4

Reduce the heat to low and add ground cinnamon, ground nutmeg, ground ginger, and salt. Stir well to incorporate the spices evenly.

Step 5

Cook the pudding for an additional 5 minutes, stirring constantly to prevent it from sticking to the bottom of the pan.

Step 6

Remove the saucepan from heat and stir in vanilla extract. Let the pudding cool slightly for 5 minutes.

Step 7

Pour the pudding into individual serving bowls or a large serving dish. Cover the surface with plastic wrap to prevent a skin from forming. Refrigerate for at least 2 hours or until fully chilled.

Step 8

Before serving, top with a dollop of whipped cream and a sprinkle of crushed gingersnap cookies if desired.
