  • 1.5 cups Shredded cheddar cheese
  • 1.5 cups Shredded Monterey Jack cheese
  • 8 large Tortillas (flour or corn)
  • 0.25 cup Fresh cilantro, chopped
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 1 tsp Cumin
  • 1 tsp Chili powder
  • 1 cup Chicken broth

Directions

Step 1

Preheat your oven to 375°F (190°C). Grease a 9x13-inch baking dish and set aside.

Step 2

Place the chicken breasts in a large pot and add enough water to cover them. Bring to a boil, then reduce heat and simmer for 20-25 minutes or until the chicken is fully cooked. Remove chicken from the pot, let it cool slightly, and shred using two forks.

Heat the olive oil in a large skillet over medium heat. Add the diced onion and cook until softened, about 3-4 minutes. Stir in the minced garlic and diced green chilies, cooking for another 1-2 minutes.
