Ingredients

  • 6 cups fresh peaches (or other fruit, such as berries or apples)
  • 0.5 cups granulated sugar (for fruit)
  • 2 tablespoons brown sugar
  • 1 tablespoon lemon juice
  • 0.25 cups unsalted butter
  • 1 cup all-purpose flour
  • 1 cup granulated sugar (for topping)
  • 2 teaspoons baking powder
  • 0.25 teaspoons salt
  • 0.75 cups whole milk
  • 0.5 teaspoons ground cinnamon (optional, for garnish)
  • 4 scoops vanilla ice cream (optional, for serving)

Directions

Step 1

Preheat the oven to 375°F (190°C). Grease a 9x13-inch baking dish with butter or nonstick spray.

Step 2

In a large mixing bowl, combine the fresh fruit, 1/2 cup granulated sugar, 2 tablespoons brown sugar, and lemon juice. Toss gently to coat and set aside for 10-15 minutes to release some juices.

Step 3

Place the butter in the prepared baking dish and transfer it to the oven to melt while preparing the cobbler batter.

Step 4

In another mixing bowl, whisk together the flour, 1 cup granulated sugar, baking powder, and salt. Gradually add the milk, stirring until smooth and lump-free.

Step 5

Carefully remove the baking dish with the melted butter from the oven. Pour the batter over the butter, but do not stir. Instead, spoon the fruit mixture and its juices evenly over the batter. Again, do not stir; the batter will rise as it bakes.

Step 6

If desired, sprinkle ground cinnamon lightly over the top for added flavor.

Step 7

Bake in the preheated oven for 35-40 minutes, or until the top is golden brown and a toothpick inserted into the batter comes out clean.

Step 8

Remove from the oven and let the cobbler cool slightly for about 10 minutes before serving.

Step 9

Serve warm with a scoop of vanilla ice cream on top for an extra-special treat!
