Ingredients

  • 1 cup Cooked quinoa
  • 0.75 cup All-purpose flour
  • 1 teaspoon Baking powder
  • 0.25 teaspoon Baking soda
  • 0.25 teaspoon Salt
  • 0.5 teaspoon Ground cinnamon
  • 0.75 cup Milk (dairy or non-dairy)
  • 1 large Egg
  • 2 tablespoons Maple syrup
  • 1 teaspoon Vanilla extract
  • 2 tablespoons Unsalted butter (melted)
  • 1 as needed Oil or butter (for greasing the skillet)

Directions

Step 1

In a large bowl, whisk together the dry ingredients: all-purpose flour, baking powder, baking soda, salt, and ground cinnamon.

Step 2

In a separate medium bowl, mix the wet ingredients: milk, egg, maple syrup, vanilla extract, and melted butter. Whisk until fully combined.

Step 3

Add the cooked quinoa to the wet ingredients and stir to distribute evenly.

Step 4

Gradually pour the wet mixture into the bowl with the dry ingredients. Gently fold the batter together until just combined. Avoid overmixing.

Step 5

Heat a non-stick skillet or griddle over medium heat and lightly grease it with oil or butter.

Step 6

Spoon 1/4 cup of batter onto the hot skillet for each pancake. Spread it out slightly with the back of the spoon if needed.

Step 7

Cook the pancakes for 2-3 minutes or until bubbles appear on the surface and the edges look set. Flip and cook the other side for an additional 1-2 minutes or until golden brown.

Step 8

Transfer the cooked pancakes to a plate and repeat with the remaining batter, greasing the skillet as necessary.

Step 9

Serve the pancakes warm with your favorite toppings such as fresh fruit, yogurt, or additional maple syrup.
