In a small bowl, combine the warm water (approximately 110°F) and honey. Stir until the honey dissolves completely.
Sprinkle the active dry yeast over the water-honey mixture and let it sit for 5-10 minutes until frothy.
In a large mixing bowl, combine the whole wheat flour, all-purpose flour, rolled oats, flaxseed meal, and salt. Mix well.
Make a well in the center of the dry ingredients. Add the yeast mixture and olive oil into the well.
