Ingredients

  • 500 g beef brisket
  • 2 large carrots
  • 3 medium potatoes
  • 1 large onion
  • 3 large garlic cloves
  • 200 g cabbage
  • 2 tbsp tomato paste
  • 1 tbsp paprika
  • 2 tbsp fresh parsley
  • 2 tsp salt
  • 1 tsp black pepper
  • 1.5 liters beef broth
  • 2 pieces bay leaves
  • 2 tbsp vegetable oil
  • 500 ml water

Directions

Step 1

Dice the beef brisket into small, bite-sized cubes. Peel and chop the carrots, potatoes, and onion into rough chunks. Mince the garlic finely. Shred the cabbage into thin strips.

Step 2

Heat the vegetable oil in a large soup pot over medium heat. Once hot, add the diced beef brisket and sear until browned on all sides, about 5-7 minutes.

Step 3

Add the chopped onion and minced garlic to the pot. Sauté for 3-4 minutes until fragrant and softened.

Step 4

Stir in the tomato paste and paprika. Cook for 1-2 minutes to deepen the flavors.

Step 5

Pour in the beef broth and water, then stir well. Add the bay leaves, salt, and black pepper. Bring the mixture to a boil over high heat.

Step 6

Reduce the heat to low, cover the pot, and let it simmer gently for 45 minutes to tenderize the beef.

Step 7

Add the carrots, potatoes, and cabbage to the soup. Simmer for another 30 minutes until the vegetables are soft and the flavors are well combined.

Step 8

Remove the bay leaves and stir in the freshly chopped parsley just before serving.

Step 9

Taste and adjust seasoning with additional salt and pepper if needed. Serve hot with crusty bread or flatbread!
