Wash the banana peppers thoroughly under cold water to remove any dirt. Pat them dry with a clean towel.
Slice off the stem end of each pepper, then cut the peppers into thin rings, approximately 1/4 inch thick. Remove any seeds if desired for a milder flavor.
Peel the garlic cloves and lightly smash them with the side of a knife or a flat surface.
In a medium saucepan, combine white vinegar, water, granulated sugar, and salt. Whisk gently to dissolve the sugar and salt.
Add the garlic cloves, mustard seeds, celery seeds, and turmeric powder to the saucepan. Bring the mixture to a boil over medium heat.

If storing long-term, follow proper canning procedures by sealing the jars with lids and processing them in a boiling water bath for 10 minutes. If eating within 2 weeks, simply seal the jars tightly and store in the refrigerator.
Allow the pickled banana peppers to sit for at least 24 hours before enjoying to allow the flavors to develop. They taste best after 3-7 days of marinating in the brine.
