Ingredients

  • 12 pieces fresh jalapenos
  • 8 oz cream cheese
  • 1 cup shredded cheddar cheese
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 6 slices cooked bacon
  • 1 cup panko breadcrumbs
  • 1 cup parmesan cheese
  • 2 tbsp unsalted butter
  • 2 pieces eggs
  • 1 cup all-purpose flour
  • 3 cups vegetable oil
  • 0.5 tsp salt
  • 0.5 tsp black pepper

Directions

Step 1

Start by washing the jalapenos thoroughly. Cut each jalapeno in half lengthwise and use a small spoon to scoop out the seeds and membranes. Set aside.

Step 2

In a medium mixing bowl, combine the cream cheese, shredded cheddar cheese, garlic powder, smoked paprika, and salt. Mix until smooth and creamy.

Step 3

Crumble the cooked bacon into small pieces and fold it into the cheese mixture.

Step 4

Spoon the cheese and bacon filling into each jalapeno half, pressing gently to fill them completely.

Step 5

Set up a breading station with three shallow bowls: one with all-purpose flour, one with beaten eggs, and one with a mixture of panko breadcrumbs and parmesan cheese.

Step 6

Lightly coat each stuffed jalapeno in flour, then dip it in the egg wash, allowing the excess to drip off, and finally coat it in the breadcrumb mixture. Press the breadcrumbs gently to ensure they stick.

Step 7

In a deep saucepan, heat vegetable oil to 350°F (175°C). Carefully fry the jalapeno poppers in batches, about 3-4 at a time, until golden brown and crisp, approximately 2-3 minutes per batch.

Step 8

Using a slotted spoon, remove the poppers from the oil and transfer them to a plate lined with paper towels to drain excess oil.

Step 9

Let them cool slightly and serve warm with your favorite dipping sauce or enjoy them as is. Caution: the filling will be hot!
