Ingredients

  • 2 pounds Russet potatoes
  • 1 Garlic bulb
  • 1 tablespoon Olive oil
  • 4 tablespoons Unsalted butter
  • 0.5 cup Whole milk
  • 0.25 cup Heavy cream
  • 1 teaspoon Salt
  • 0.5 teaspoon Ground black pepper
  • 2 tablespoons Fresh chives (optional, for garnish)

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Cut the top 1/4 inch off the garlic bulb to expose the cloves. Drizzle the olive oil over the cut side of the garlic and wrap it in aluminum foil.

Step 3

Place the wrapped garlic on a baking sheet and roast in the oven for 35-40 minutes, or until the cloves are soft and golden brown. Remove from the oven and allow it to cool slightly.

Step 4

While the garlic is roasting, peel and cut the potatoes into 1-inch chunks.

Step 5

Add the potato chunks to a large pot of cold water, making sure the water covers the potatoes by about 1 inch. Add a pinch of salt to the water.

Step 6

Bring the pot to a boil over medium-high heat. Reduce the heat to medium and simmer for 15-20 minutes, or until the potatoes are fork-tender.

Step 7

Drain the cooked potatoes and return them to the pot. Place the pot over low heat for 1-2 minutes to evaporate any remaining moisture.

Step 8

Squeeze the roasted garlic cloves out of the bulb and add them to the potatoes.

Step 9

Add the butter, milk, and heavy cream to the pot. Mash the potatoes and garlic together with a potato masher or use an electric hand mixer for a smoother texture.

Step 10

Season with salt and pepper, adjusting to taste.

Step 11

Transfer the mashed potatoes to a serving bowl and garnish with chopped chives, if desired.

Step 12

Serve hot and enjoy!
