Ingredients

  • 170 grams semi-sweet chocolate chips
  • 113 grams unsalted butter
  • 100 grams granulated sugar
  • 2 eggs
  • 2 egg yolks
  • 1 teaspoon vanilla extract
  • 60 grams all-purpose flour
  • 12 mini marshmallows
  • 1 tablespoon cocoa powder
  • 1 can non-stick cooking spray

Directions

Step 1

Preheat your oven to 220°C (425°F). Lightly grease six 6-ounce ramekins with non-stick cooking spray, then dust them with cocoa powder to prevent sticking.

Step 2

In a microwave-safe bowl, melt the semi-sweet chocolate chips and butter together in 30-second intervals, stirring after each interval, until smooth and fully combined.

Step 3

In a separate mixing bowl, whisk together the granulated sugar, eggs, egg yolks, and vanilla extract until light and slightly frothy, about 2 minutes.

Step 4

Slowly pour the melted chocolate mixture into the egg mixture, whisking continuously until fully combined.

Step 5

Sift the all-purpose flour over the chocolate mixture and gently fold it in using a spatula, ensuring there are no lumps.

Step 6

Spoon a generous amount of batter into each prepared ramekin, filling them about halfway.

Step 7

Place 2 mini marshmallows into the center of each ramekin, then cover with the remaining batter, filling them almost to the top.

Step 8

Place the ramekins on a baking sheet and bake in the preheated oven for 10-12 minutes, or until the edges are set but the centers remain slightly jiggly.

Step 9

Remove the cakes from the oven and let them cool for 1 minute. Run a knife along the edges of the ramekins to loosen the cakes, then carefully invert them onto serving plates.

Step 10

Serve immediately while warm, with a dollop of whipped cream or a scoop of vanilla ice cream if desired.
