Ingredients

  • 2 tablespoons Olive oil
  • 1 medium Yellow onion, diced
  • 4 cloves Garlic cloves, minced
  • 28 ounces Crushed canned tomatoes (preferably San Marzano)
  • 4 cups Chicken or vegetable broth
  • 1 cup Fresh basil leaves, loosely packed
  • 1 teaspoon Sugar (optional, to taste)
  • 0.5 cup Heavy cream
  • 1 teaspoon Salt
  • 0.5 teaspoon Ground black pepper
  • 0.25 cup Grated Parmesan cheese (for garnish, optional)
  • 1 loaf Crusty bread (for serving, optional)

Directions

Step 1

Heat the olive oil in a large pot over medium heat.

Step 2

Add the diced yellow onion and sauté for 4-5 minutes until soft and translucent.

Step 3

Stir in the minced garlic and cook for an additional 1 minute, stirring constantly, until fragrant.

Step 4

Pour in the crushed canned tomatoes and chicken or vegetable broth. Stir to combine.

Step 5

Add the fresh basil leaves (reserve a few for garnish if desired), sugar (if using), salt, and ground black pepper. Stir gently.

Step 6

Bring the soup to a boil, then reduce the heat to low and let it simmer for 20 minutes, stirring occasionally.

Step 7

Using an immersion blender, carefully blend the soup until smooth. Alternatively, transfer the soup in batches to a blender and puree until creamy, then return to the pot.

Step 8

Stir in the heavy cream and let the soup heat through for 1-2 minutes without boiling.

Step 9

Taste the soup and adjust seasoning with additional salt, pepper, or sugar as needed.

Step 10

Ladle the soup into bowls and garnish with grated Parmesan cheese and a sprig of fresh basil if desired.

Step 11

Serve warm with a side of crusty bread for dipping.
