Ingredients

  • 4 pieces chicken breasts
  • 3 tablespoons olive oil
  • 4 cloves garlic
  • 15 ounces crushed tomatoes
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 0.5 teaspoon red pepper flakes
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 cup grated Parmesan cheese
  • 2 tablespoons fresh parsley
  • 0.5 cup chicken broth
  • 1 medium onion
  • 3 cups baby spinach

Directions

Step 1

Heat the olive oil in a large skillet over medium heat.

Step 2

Season the chicken breasts with salt and black pepper on both sides.

Step 3

Sear the chicken in the skillet for 4-5 minutes per side until golden brown. Remove from the skillet and set aside.

Step 4

Finely dice the onion and mince the garlic cloves.

Step 5

In the same skillet, add the diced onion and sauté for 2-3 minutes until softened.

Step 6

Add the minced garlic, oregano, basil, and red pepper flakes. Stir and cook for another minute until fragrant.

Step 7

Pour in the chicken broth and scrape up any browned bits at the bottom of the skillet for extra flavor.

Step 8

Add the crushed tomatoes to the skillet and stir to combine.

Step 9

Return the seared chicken to the skillet, nestling it into the tomato sauce.

Step 10

Reduce the heat to low, cover, and simmer for 18-20 minutes, or until the chicken is fully cooked and reaches an internal temperature of 165°F (74°C).

Step 11

When the chicken is almost done, stir in the baby spinach and let it wilt into the sauce.

Step 12

Sprinkle the grated Parmesan cheese over the dish and allow it to melt.

Step 13

Garnish with freshly chopped parsley before serving.

Step 14

Serve hot with crusty bread, pasta, or a side of your choice.
