Ingredients

  • 1 lb boneless, skinless chicken thighs
  • 0.5 cup cornstarch
  • 0.25 cup all-purpose flour
  • 1 large egg
  • 2 tablespoons soy sauce
  • 0.5 cup vegetable oil
  • 2 teaspoons minced garlic
  • 1 teaspoon minced ginger
  • 3 dried red chilies
  • 0.25 cup hoisin sauce
  • 2 tablespoons rice vinegar
  • 2 tablespoons sugar
  • 0.25 cup chicken stock
  • 2 stalks scallions
  • 1 teaspoon sesame seeds

Directions

Step 1

Cut the chicken thighs into bite-sized pieces and place in a bowl. Add 1 tablespoon of soy sauce and the egg; mix well to coat the chicken.

Step 2

In a separate bowl, combine the cornstarch and flour. Dredge the marinated chicken pieces in the flour mixture until fully coated.

Step 3

Heat the vegetable oil in a large skillet or wok over medium-high heat. Fry the chicken pieces in batches until golden brown and crispy, about 4-5 minutes per batch. Remove and drain on a paper towel-lined plate.

Step 4

In the same skillet or wok, remove excess oil, leaving about 1 tablespoon. Add the minced garlic, minced ginger, and dried red chilies. Stir-fry for about 30 seconds, until fragrant.

Step 5

In a small bowl, mix together the hoisin sauce, rice vinegar, sugar, remaining 1 tablespoon of soy sauce, and chicken stock. Pour the sauce mixture into the skillet with the aromatics.

Step 6

Bring the sauce to a simmer and allow it to thicken slightly, about 2-3 minutes.

Step 7

Return the fried chicken to the skillet and toss to coat evenly in the sauce.

Step 8

Slice the scallions and add them to the skillet. Toss gently to distribute.

Step 9

Garnish the dish with sesame seeds and serve hot over steamed rice or alongside your favorite vegetable.
