Ingredients

  • 1 pound medium shrimp, peeled and deveined
  • 0.5 pound andouille sausage, sliced into rounds
  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 1 medium yellow onion, finely chopped
  • 3 cloves garlic, minced
  • 2 tablespoons all-purpose flour
  • 1.5 cups heavy cream
  • 1 cup chicken broth
  • 2 teaspoons Cajun seasoning
  • 1 teaspoon smoked paprika
  • 0.5 teaspoon dried thyme
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped
  • 12 ounces fettuccine pasta

Directions

Step 1

Cook the fettuccine pasta according to the package instructions. Drain and set aside.

Step 2

In a large skillet, heat the olive oil over medium heat. Add the andouille sausage slices and cook for 2-3 minutes on each side, until browned. Remove the sausage and set aside.

Step 3

In the same skillet, melt the butter. Add the chopped onion and sauté for 3-4 minutes, or until translucent. Stir in the minced garlic and cook for another 30 seconds until fragrant.

Step 4

Sprinkle the flour over the onion mixture and stir continuously to create a roux. Cook for 1-2 minutes to remove the raw flour taste.

Step 5

Gradually whisk in the chicken broth and heavy cream, making sure there are no lumps. Bring the mixture to a gentle simmer.

Step 6

Stir in the Cajun seasoning, smoked paprika, dried thyme, salt, and black pepper. Let the sauce simmer for about 5 minutes until it thickens slightly.

Step 7

Add the shrimp and cooked sausage back into the skillet. Cook for 5-6 minutes, or until the shrimp turn pink and are fully cooked.

Step 8

Toss the cooked pasta with the sauce until fully coated. Sprinkle with fresh parsley for garnish.

Step 9

Serve immediately and enjoy!
