Ingredients

  • 2 pounds ground beef
  • 1 tablespoon olive oil
  • 1 large onion, diced
  • 1 medium green bell pepper, diced
  • 3 cloves garlic, minced
  • 28 ounces diced tomatoes (with juices)
  • 15 ounces tomato sauce
  • 15 ounces kidney beans, drained and rinsed
  • 15 ounces black beans, drained and rinsed
  • 1 cup beef broth
  • 2 tablespoons chili powder
  • 1 tablespoon ground cumin
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.25 teaspoon cayenne pepper (optional for heat)

Directions

Step 1

Heat a large pot or Dutch oven over medium-high heat. Add the olive oil and allow it to warm up.

Step 2

Add the ground beef to the pot and cook, breaking it apart with a spoon, until browned and fully cooked, about 6–8 minutes. Drain any excess fat if needed.

Step 3

Stir in the diced onion, green bell pepper, and minced garlic. Cook for another 5 minutes until the vegetables are softened.

Step 4

Add the chili powder, ground cumin, paprika, dried oregano, salt, black pepper, sugar, and cayenne pepper if using. Stir well to coat the beef and vegetables with the spices.

Step 5

Pour in the diced tomatoes (with their juices), tomato sauce, and beef broth. Stir to combine.

Step 6

Add the kidney beans and black beans to the pot, mixing thoroughly.

Step 7

Bring the chili to a boil, then reduce the heat to low. Allow it to simmer uncovered for 45–50 minutes, stirring occasionally to prevent sticking.

Step 8

Taste the chili and adjust seasonings as needed. Add more salt, black pepper, or cayenne for additional heat.

Step 9

Serve hot in bowls. Optionally, garnish with shredded cheese, sour cream, fresh cilantro, or diced green onions. Enjoy!
