Ingredients

  • 1 pound ground beef
  • 1 yellow onion, diced
  • 3 garlic cloves, minced
  • 1 green bell pepper, diced
  • 28 ounces diced tomatoes (with juice)
  • 15 ounces tomato sauce
  • 2 cups beef broth
  • 2 cups elbow macaroni, uncooked
  • 1 teaspoon paprika
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 teaspoon light brown sugar
  • 1 bay leaf
  • 1 cup shredded cheddar cheese (optional, for garnish)
  • 2 tablespoons chopped parsley (optional, for garnish)

Directions

Step 1

In a large pot or Dutch oven, heat over medium-high heat and brown the ground beef until fully cooked. Drain any excess fat.

Step 2

Add the diced onion, garlic, and green bell pepper. Sauté for 3-4 minutes until the vegetables are softened and fragrant.

Step 3

Stir in the diced tomatoes (with their juice), tomato sauce, and beef broth. Mix until well combined.

Step 4

Add the uncooked elbow macaroni, paprika, Italian seasoning, salt, black pepper, light brown sugar, and bay leaf. Stir everything together.

Step 5

Bring the mixture to a boil, then reduce the heat to low and cover with a lid. Simmer for 20-25 minutes, stirring occasionally, until the macaroni is tender and the flavors are melded.

Step 6

Once the macaroni is fully cooked, remove the pot from the heat and discard the bay leaf.

Step 7

Taste and adjust seasoning if needed. Optionally, sprinkle shredded cheddar cheese and chopped parsley over the top for garnish.

Step 8

Serve warm and enjoy!
