Ingredients

  • 4 medium sized zucchini
  • 1 large yellow onion
  • 3 garlic cloves
  • 2 tablespoons olive oil
  • 4 cups vegetable broth
  • 0.5 cup heavy cream
  • 2 tablespoons fresh parsley
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.25 teaspoon ground cumin
  • 1 tablespoon fresh lemon juice

Directions

Step 1

Wash and trim the ends of the zucchini. Chop them into 1-inch chunks.

Step 2

Peel and finely dice the yellow onion and garlic cloves.

Step 3

Heat the olive oil in a large pot over medium heat.

Step 4

Add the diced onion and garlic to the pot. Sauté for 3-4 minutes, or until the onion becomes translucent and fragrant.

Stir in the zucchini and cook for an additional 5 minutes, stirring occasionally.
