  • 1 cup Baby clams (canned or fresh, rinsed and drained if canned)
  • 6 cups Fish stock (or seafood stock)
  • 2 cups Diced tomatoes (canned, with juices)
  • 2 medium Russet potatoes (peeled and cubed)
  • 1 medium Onion (finely chopped)
  • 3 cloves Garlic (minced)
  • 2 stalks Celery (sliced)
  • 2 medium Carrots (sliced)
  • 2 tablespoons Olive oil
  • 2 leaves Bay leaves
  • 1 teaspoon Dried thyme
  • 1 teaspoon Smoked paprika
  • 1 teaspoon Salt
  • 0.5 teaspoon Ground black pepper
  • 0.25 cup Fresh parsley (chopped, for garnish)
  • 1 loaf Crusty bread (optional, for serving)

Directions

Step 1

Peel and devein the shrimp if not prepped already, and set aside in the refrigerator.

Step 2

In a skillet over medium heat, warm the olive oil and sauté the chopped onion, minced garlic, celery, and carrots for 5-7 minutes, or until softened and fragrant.

Step 3

Add the sautéed vegetables to the crock pot.

Step 4

Stir in the fish stock, diced tomatoes with their juices, cubed potatoes, bay leaves, dried thyme, smoked paprika, salt, and black pepper.

Step 5

Cover the crock pot with the lid and cook on low for 3 hours, or until the potatoes are tender.

Step 6

After 3 hours, add the shrimp, scallops, white fish, and clams to the crock pot. Stir gently to combine.

Step 7

Cover and continue cooking on low for an additional 1 hour, or until the seafood is cooked through and tender.

Step 8

Remove the bay leaves and taste the soup. Adjust seasoning with additional salt and pepper if needed.

Step 9

Ladle the soup into bowls and garnish with fresh chopped parsley.

Step 10

Serve hot with slices of crusty bread on the side, if desired.
