Ingredients

  • 1 cup All-purpose flour
  • 1 cup Wheat bran
  • 0.5 cup Brown sugar, packed
  • 1 teaspoon Baking powder
  • 0.5 teaspoon Baking soda
  • 0.25 teaspoon Salt
  • 1 cup Buttermilk
  • 0.25 cup Vegetable oil
  • 1 large Egg
  • 1 teaspoon Vanilla extract
  • 0.5 cup Raisins or chopped dates (optional)
  • 0.25 cup Chopped nuts (optional)

Directions

Step 1

Preheat your oven to 375°F (190°C) and line a 12-cup muffin tin with paper liners or lightly grease it.

Step 2

In a large mixing bowl, whisk together the all-purpose flour, wheat bran, brown sugar, baking powder, baking soda, and salt until well combined.

Step 3

In a separate bowl, whisk together the buttermilk, vegetable oil, egg, and vanilla extract until smooth.

Step 4

Gradually pour the wet ingredients into the dry ingredients, stirring gently until just combined. Avoid overmixing to ensure the muffins stay tender.

Step 5

If desired, fold in raisins, chopped dates, and/or nuts for added texture and flavor.

Step 6

Evenly distribute the batter among the prepared muffin cups, filling each about 3/4 full.

Step 7

Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

Step 8

Remove the muffins from the oven and let them cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.

Step 9

Serve warm or store in an airtight container at room temperature for up to 3 days. These muffins can also be frozen for longer storage.
