Ingredients

  • 2 pieces Ripe banana
  • 1.5 cups All-purpose flour
  • 2 teaspoons Baking powder
  • 2 tablespoons Granulated sugar
  • 0.25 teaspoons Salt
  • 1 piece Egg
  • 1 teaspoon Vanilla extract
  • 1.25 cups Milk
  • 3 tablespoons Unsalted butter (melted)
  • 1 as needed Vegetable oil or butter (for cooking)
  • 1 as desired Maple syrup or additional toppings (optional)

Directions

Step 1

In a large mixing bowl, mash the ripe bananas until smooth using a fork or potato masher.

Step 2

Add the egg, vanilla extract, and milk to the mashed bananas and whisk together until well combined.

Step 3

In a separate bowl, whisk together the flour, baking powder, sugar, and salt.

Step 4

Gradually add the dry ingredients to the wet banana mixture, stirring gently until just combined. Be careful not to overmix; a few lumps are okay.

Step 5

Stir in the melted butter to create a smooth batter. Let the batter rest for 5 minutes to allow the baking powder to activate.

Step 6

Heat a non-stick skillet or griddle over medium heat and lightly grease it with vegetable oil or butter.

Step 7

Pour 1/4 cup of batter onto the skillet for each pancake. Cook for 2-3 minutes, or until bubbles form on the surface and the edges look set.

Step 8

Flip the pancake carefully with a spatula and cook for an additional 1-2 minutes, or until golden brown on the bottom.

Step 9

Remove the cooked pancakes from the skillet and repeat with the remaining batter, greasing the skillet as needed.

Step 10

Serve the pancakes warm with maple syrup, sliced bananas, or your favorite toppings.
