Ingredients

  • 2 lbs Beef chuck, cut into 1-inch cubes
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 0.25 cups All-purpose flour
  • 2 tbsp Olive oil
  • 1 tbsp Unsalted butter
  • 1 medium Yellow onion, diced
  • 3 medium Carrots, peeled and cut into chunks
  • 2 Celery stalks, sliced
  • 3 medium Russet potatoes, peeled and cubed
  • 3 Garlic cloves, minced
  • 2 tbsp Tomato paste
  • 4 cups Beef broth
  • 1 cup Dry red wine (optional)
  • 1 tbsp Worcestershire sauce
  • 2 Bay leaves
  • 3 Fresh thyme sprigs
  • 1 cup Frozen peas
  • 2 tbsp Chopped fresh parsley (for garnish)

Directions

Step 1

Season the beef cubes with salt and black pepper. Dredge them lightly in flour, shaking off any excess.

Step 2

Heat the olive oil and butter in a large Dutch oven or heavy-bottomed pot over medium-high heat.

Step 3

In batches, sear the beef cubes until browned on all sides. Remove the beef from the pot and set aside.

Step 4

In the same pot, add the diced onion, carrots, and celery. Sauté until the vegetables soften, about 5 minutes.

Step 5

Add the minced garlic and tomato paste, stirring for 1-2 minutes until fragrant.

Step 6

Pour in the beef broth and red wine (if using), scraping the bottom of the pot to release any browned bits.

Step 7

Return the seared beef to the pot, along with the Worcestershire sauce, bay leaves, and thyme sprigs. Stir to combine.

Step 8

Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for 1.5 hours, stirring occasionally.

Step 9

Add the potatoes and cook for an additional 30 minutes, or until the potatoes are fork-tender.

Step 10

Stir in the frozen peas during the last 5 minutes of cooking.

Step 11

Remove the bay leaves and thyme sprigs. Taste and adjust seasoning with salt and pepper as needed.

Step 12

Serve hot, garnished with fresh parsley. Enjoy with crusty bread or over rice if desired.
