Ingredients

  • 4 cups fresh sorrel leaves
  • 2 tablespoons butter
  • 1 medium (chopped) yellow onion
  • 2 minced garlic cloves
  • 2 medium (peeled and diced) russet potatoes
  • 4 cups vegetable broth
  • 0.5 cup heavy cream
  • 1 teaspoon (adjust to taste) salt
  • 0.5 teaspoon (freshly ground) black pepper
  • 2 teaspoons lemon juice
  • 2 tablespoons (chopped, for garnish) fresh dill

Directions

Step 1

Rinse the sorrel leaves thoroughly to remove any dirt. Trim off the tough stems and roughly chop the leaves. Set aside.

Step 2

In a large pot, melt the butter over medium heat. Add the chopped yellow onion and sauté until translucent, about 4-5 minutes. Stir in the minced garlic and cook for an additional minute.

Step 3

Add the diced potatoes to the pot and pour in the vegetable broth. Bring the mixture to a boil, then reduce the heat to a simmer. Cover and cook for 15-20 minutes, or until the potatoes are tender.

Step 4

Stir in the chopped sorrel leaves and simmer for another 2-3 minutes, just until the sorrel is wilted and tender.

Step 5

Using an immersion blender, puree the soup until smooth. Alternatively, carefully transfer the soup to a countertop blender in batches and blend until smooth, then return it to the pot.

Step 6

Stir in the heavy cream, salt, and black pepper. Taste and adjust seasoning as needed. Add the lemon juice to brighten the flavors.

Step 7

Simmer the soup for another 2-3 minutes, stirring occasionally, to combine all the flavors.

Step 8

Ladle the soup into bowls and garnish with chopped fresh dill before serving. Serve warm, accompanied by crusty bread if desired.
