  • 4 pieces Boneless, skinless chicken breasts
  • 2 whole Lemon
  • 4 cloves Garlic cloves
  • 3 tablespoons Olive oil
  • 1 teaspoon Fresh thyme leaves
  • 2 tablespoons Fresh parsley
  • 1 cup Chicken broth
  • 1 teaspoon Salt
  • 0.5 teaspoons Black pepper

Directions

Step 1

Begin by preparing the chicken. Pound the chicken breasts to an even thickness, about 1/2 inch, to ensure even cooking.

Step 2

Season both sides of the chicken breasts with salt and black pepper.

Step 3

Zest one of the lemons and then juice both. Reserve the juice and zest for later use.

Step 4

Peel and finely mince the garlic cloves.

In a large skillet, heat the olive oil over medium heat.

Add the chicken breasts to the hot skillet and sear for 3-4 minutes on each side, or until golden brown. Remove the chicken and set aside on a plate.
