Ingredients

  • 1 cup Short-grain white rice
  • 2 cups Water
  • 4 cups Whole milk
  • 0.5 cup Granulated sugar
  • 0.25 teaspoon Salt
  • 2 teaspoons Vanilla extract
  • 1 teaspoon Ground cinnamon
  • 0.5 cup Raisins (optional)
  • 1 teaspoon Unsalted butter (for greasing)

Directions

Step 1

Rinse the rice under cold running water until the water runs clear. Set aside.

Step 2

In a medium saucepan, bring 2 cups of water to a boil. Stir in the rinsed rice, reduce heat to low, cover, and simmer for 10 minutes until most of the water is absorbed.

Step 3

While the rice is simmering, grease the bottom and sides of a large, heavy-bottomed saucepan with 1 teaspoon of unsalted butter to prevent sticking.

Step 4

Add the cooked rice, whole milk, sugar, and salt to the greased saucepan. Stir to combine and place over medium heat.

Step 5

Bring the mixture to a gentle simmer, stirring frequently to prevent sticking or burning. Reduce the heat to low and allow the pudding to cook for about 25–30 minutes, stirring occasionally, until thickened and creamy.

Step 6

Once the pudding has reached the desired consistency, remove it from heat and stir in the vanilla extract, ground cinnamon, and raisins (if using).

Step 7

Allow the pudding to cool slightly before serving. It will thicken further as it cools.

Step 8

Serve warm or chilled. Optional: Garnish with a sprinkle of cinnamon, whipped cream, or a few extra raisins.
