Ingredients

  • 1 pound Dried lima beans
  • 1 pound Chicken breasts (boneless, skinless)
  • 2 large Carrots
  • 2 Celery stalks
  • 1 medium Yellow onion
  • 3 cloves Garlic
  • 6 cups Chicken broth
  • 1 teaspoon Dried thyme
  • 1 Bay leaf
  • 1 teaspoon Salt
  • 0.5 teaspoon Ground black pepper
  • 1 tablespoon Olive oil
  • 2 tablespoons Fresh parsley (optional, for garnish)

Directions

Step 1

Rinse the dried lima beans thoroughly under cold water. Inspect and remove any debris or damaged beans. Set them aside.

Step 2

Dice the carrots, celery, and onion. Mince the garlic cloves for added flavor.

Step 3

Heat the olive oil in a medium skillet over medium heat. Add the diced onion and garlic, and sauté for 3–4 minutes until fragrant and softened.

Step 4

Place the chicken breasts into the crock pot. Add the sautéed onions and garlic, followed by the diced carrots, celery, and rinsed lima beans.

Step 5

Pour in the chicken broth, ensuring that the ingredients are fully submerged. Add the dried thyme, bay leaf, salt, and black pepper.

Step 6

Stir gently to combine the ingredients. Cover the crock pot with its lid.

Step 7

Set the crock pot to LOW and cook for 6–7 hours, or until the lima beans are tender and the chicken is fully cooked.

Step 8

Once cooked, remove the chicken breasts and shred the meat using two forks. Return the shredded chicken to the crock pot and stir it into the soup.

Step 9

Remove the bay leaf and taste for seasoning, adjusting salt and pepper if needed.

Step 10

Ladle the lima bean soup into bowls and garnish with freshly chopped parsley if desired. Serve warm with crusty bread for a complete meal.
