Ingredients

  • 3 cups all-purpose flour
  • 1 cup warm water (approximately 110°F)
  • 2.25 teaspoons active dry yeast
  • 2 teaspoons granulated sugar
  • 1 teaspoon salt
  • 2 tablespoons fresh rosemary
  • 3 tablespoons olive oil
  • 1 tablespoon extra rosemary for topping
  • 1 teaspoon coarse sea salt for topping (optional)

Directions

Step 1

In a large mixing bowl, dissolve the yeast and sugar in the warm water. Let it sit for 5-10 minutes until foamy. This activates the yeast.

Step 2

Add 1 tablespoon of olive oil, salt, and chopped fresh rosemary to the yeast mixture.

Step 3

Gradually stir in the flour, one cup at a time, until a soft dough forms.

Step 4

Turn the dough out onto a floured surface and knead for about 8 minutes until smooth and elastic. Alternatively, you can use a stand mixer with a dough hook for kneading.

Step 5

Lightly grease a large bowl with olive oil and place the dough inside. Turn the dough to coat it with oil, then cover the bowl with a damp towel or plastic wrap.

Step 6

Let the dough rise in a warm place for about 1-1.5 hours or until doubled in size.

Step 7

Punch the dough down and shape it into a round loaf. Place it on a parchment-lined baking sheet.

Step 8

Brush the top of the loaf with the remaining olive oil and sprinkle with extra rosemary and coarse sea salt if desired.

Step 9

Preheat your oven to 375°F (190°C). Let the dough rest for another 15-20 minutes while the oven heats up.

Step 10

Bake in the preheated oven for 18-20 minutes or until the bread is golden brown and sounds hollow when tapped on the bottom.

Step 11

Remove the bread from the oven and cool on a wire rack for at least 15 minutes before slicing.

Step 12

Serve warm or at room temperature. This bread pairs wonderfully with olive oil for dipping or alongside soups and stews.
