Ingredients

  • 3 whole fresh jalapenos
  • 4 medium ripe tomatoes
  • 1 small red onion
  • 1 bunch cilantro
  • 1 whole lime
  • 2 whole garlic cloves
  • 0.5 teaspoons ground cumin
  • 0.5 teaspoons salt
  • 0.5 teaspoons sugar
  • 1 tablespoons olive oil

Directions

Step 1

Begin by washing all the fresh produce: tomatoes, jalapenos, cilantro, and lime.

Step 2

Roast the jalapenos on a stove-top or in a dry skillet over medium-high heat for about 5 minutes, turning occasionally, until the skin is blistered and charred. Set aside to cool.

Step 3

Finely dice the tomatoes and place them into a large mixing bowl.

Step 4

Peel and finely dice the red onion. Add it to the bowl with the tomatoes.

Step 5

Once the roasted jalapenos are cool enough to handle, remove the stems and core the seeds if you prefer a milder salsa. Finely chop and add them to the mixing bowl.

Step 6

Peel and mince the garlic cloves, then add to the bowl.

Step 7

Roughly chop the cilantro leaves and tender stems, discarding the thicker stems, then add to the bowl.

Step 8

Cut the lime in half and squeeze the juice into the bowl, catching any seeds.

Step 9

Add the ground cumin, salt, and sugar to the mixture.

Step 10

Drizzle the olive oil over the salsa, then gently mix everything together until well combined.

Step 11

Taste the salsa and adjust seasoning with more salt or lime juice if needed.

Step 12

Serve immediately with tortilla chips or as a topping for tacos, burritos, or grilled dishes. Store leftover salsa in an airtight container in the refrigerator for up to 3 days.
