Ingredients

  • 6 pieces bone-in chicken thighs
  • 1.5 teaspoons salt
  • 1 teaspoon black pepper
  • 1.5 teaspoons paprika
  • 1 teaspoon dried thyme
  • 2 tablespoons all-purpose flour
  • 2 tablespoons olive oil
  • 1 large onion, diced
  • 1 medium bell pepper, diced
  • 4 garlic cloves, minced
  • 2 tablespoons tomato paste
  • 1 can (14 ounces) crushed tomatoes
  • 1.5 cups chicken broth
  • 2 bay leaves
  • 2 tablespoons fresh parsley, chopped
  • 2 scallions, thinly sliced (optional)

Directions

Step 1

Pat chicken thighs dry with a paper towel. Season both sides with 1 teaspoon salt, 1 teaspoon black pepper, 1 teaspoon paprika, and 1 teaspoon thyme.

Step 2

Dust chicken thighs with flour on all sides, shaking off any excess.

Step 3

In a large heavy-bottomed pot or Dutch oven, heat olive oil over medium-high heat. Sear chicken thighs in batches, skin-side down first, until golden brown, about 3-4 minutes per side. Remove chicken and set aside.

Step 4

In the same pot, reduce heat to medium and add the diced onion and diced bell pepper. Sauté until softened, about 5 minutes.

Step 5

Add minced garlic and tomato paste to the pot. Cook for 1-2 minutes, stirring frequently, until fragrant.

Step 6

Stir in the crushed tomatoes, chicken broth, remaining 1/2 teaspoon salt, and 1/2 teaspoon paprika. Add bay leaves and bring the mixture to a simmer.

Step 7

Return the seared chicken thighs to the pot, nestling them into the sauce. Cover with a lid and reduce heat to low. Simmer gently for 40 minutes, stirring occasionally to prevent sticking.

Step 8

Remove the lid and simmer uncovered for an additional 15-20 minutes to thicken the sauce, if desired. Discard bay leaves.

Step 9

Garnish with fresh parsley and scallions (if using). Serve hot with rice, mashed potatoes, or crusty bread.
