Ingredients

  • 2 cups All-purpose flour
  • 1.5 cups Granulated sugar
  • 0.5 cup Brown sugar
  • 2 teaspoons Baking powder
  • 1 teaspoon Baking soda
  • 2 teaspoons Ground cinnamon
  • 0.5 teaspoon Ground nutmeg
  • 0.5 teaspoon Salt
  • 1 cup Vegetable oil
  • 4 large Eggs
  • 2 teaspoons Vanilla extract
  • 3 cups Grated carrots
  • 1 cup Chopped walnuts (optional)
  • 0.5 cup Unsalted butter (softened)
  • 8 ounces Cream cheese (softened)
  • 4 cups Powdered sugar
  • 1 teaspoon Vanilla extract (for frosting)

Directions

Step 1

Preheat your oven to 350°F (175°C). Grease and lightly flour two 9-inch round cake pans or line them with parchment paper.

Step 2

In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, brown sugar, baking powder, baking soda, ground cinnamon, ground nutmeg, and salt.

Step 3

In another large bowl, whisk together the vegetable oil, eggs, and vanilla extract until well combined.

Step 4

Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.

Step 5

Fold in the grated carrots and walnuts (if using) until evenly distributed throughout the batter.

Step 6

Divide the batter evenly between the prepared cake pans and smooth the tops with a spatula.

Step 7

Bake in the preheated oven for 35-40 minutes, or until a toothpick inserted into the center of the cakes comes out clean.

Step 8

Remove the pans from the oven and let the cakes cool in the pans for 10 minutes. Then, transfer the cakes to a wire rack to cool completely.

Step 9

To make the frosting: In a large mixing bowl, beat the softened butter and cream cheese together using an electric mixer until smooth and creamy.

Step 10

Gradually add the powdered sugar, one cup at a time, and beat until fully incorporated and fluffy. Add the vanilla extract and mix until combined.

Step 11

Once the cakes are completely cooled, level the tops if needed. Place one cake layer on a serving plate and spread a generous amount of frosting on top.

Step 12

Place the second cake layer on top and frost the top and sides of the cake evenly with the cream cheese frosting.

Step 13

Decorate with additional chopped walnuts or grated carrot, if desired.

Step 14

Refrigerate the cake for at least 30 minutes before serving to allow the frosting to set. Serve and enjoy!
