Ingredients

  • 3 cups Fresh corn kernels (about 6 ears of corn)
  • 0.5 cups Milk
  • 0.5 cups Cornmeal
  • 2 tablespoons Sugar
  • 0.5 teaspoons Salt
  • 2 tablespoons Butter (for cooking)
  • 1 cups Queso fresco or mozzarella cheese (for topping)
  • 0.5 cups Sour cream or crema (optional, for serving)

Directions

Step 1

In a blender, combine the fresh corn kernels, milk, cornmeal, sugar, and salt. Blend until you achieve a thick, slightly chunky batter. Be careful not to overblend; you want some texture from the corn.

Step 2

Heat a non-stick skillet or griddle over medium heat. Add a small amount of butter to coat the surface of the skillet.

Step 3

Scoop about 1/4 cup of batter onto the skillet for each cachapa. Use the back of a spoon to spread the batter into a circle about 4–5 inches in diameter.

Step 4

Cook for 3–4 minutes, or until the edges begin to set and the bottom is golden brown. Flip carefully with a spatula and cook for another 3–4 minutes, or until the other side is golden brown as well.

Step 5

Transfer the cooked cachapas to a plate and keep them warm while you cook the remaining batter, adding more butter to the skillet as needed.

Step 6

Once all the cachapas are cooked, top each with shredded queso fresco or mozzarella cheese. The residual heat should slightly melt the cheese.

Step 7

Serve warm with a dollop of sour cream or crema, if desired. Cachapas are best enjoyed fresh, but leftovers can be stored in an airtight container in the refrigerator for up to 2 days and reheated before serving.
