Ingredients

  • 1 cup Jim Dandy quick-cooking grits
  • 4 cups Water
  • 1 teaspoon Salt
  • 1 pound Breakfast sausage (mild or spicy)
  • 2 cups Sharp cheddar cheese, shredded
  • 4 tablespoons Butter
  • 1 cup Milk
  • 2 large Eggs
  • 1 teaspoon Garlic powder
  • 1 teaspoon Paprika
  • 0.5 teaspoon Black pepper
  • 2 Green onions, chopped (optional)

Directions

Step 1

Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking dish with butter or nonstick cooking spray.

Step 2

In a medium saucepan, bring 4 cups of water and 1 teaspoon of salt to a boil. Gradually stir in the grits, reduce the heat to low, and cook for 5-7 minutes, stirring occasionally, until thickened. Remove from heat.

Step 3

While the grits are cooking, brown the sausage in a large skillet over medium heat, breaking it up into small pieces with a wooden spoon. Cook until no longer pink, about 5-7 minutes. Drain excess grease and set aside.

Step 4

In a large mixing bowl, combine the cooked grits, 1 1/2 cups of cheddar cheese, butter, milk, and seasonings (garlic powder, paprika, and black pepper). Mix thoroughly until smooth.

Step 5

Lightly beat the eggs in a small bowl and stir them into the grits mixture until fully incorporated.

Step 6

Fold the cooked sausage into the mixture, ensuring even distribution.

Step 7

Pour the mixture into the prepared baking dish. Sprinkle the remaining 1/2 cup of cheddar cheese evenly over the top.

Step 8

Bake the casserole in the preheated oven for 40-45 minutes, or until the top is golden and the casserole is set in the center.

Step 9

Remove from the oven and let cool for 5 minutes before serving. Garnish with chopped green onions, if desired.
