Ingredients

  • 2.5 cups all-purpose flour
  • 0.75 cup unsweetened cocoa powder
  • 2 teaspoons baking soda
  • 1 teaspoon baking powder
  • 0.5 teaspoon salt
  • 1 cup unsalted butter, softened
  • 1.5 cups granulated sugar
  • 3 large eggs
  • 0.5 cup molasses
  • 2 teaspoons vanilla extract
  • 1 cup buttermilk
  • 0.5 cup boiling water

Directions

Step 1

Preheat your oven to 350°F (175°C) and grease and flour a 9x13-inch baking pan, or line it with parchment paper.

Step 2

In a medium mixing bowl, sift together the flour, cocoa powder, baking soda, baking powder, and salt. Set aside.

Step 3

In a large mixing bowl, cream the softened butter and sugar together with an electric mixer on medium speed until light and fluffy, about 3 minutes.

Step 4

Beat in the eggs, one at a time, until fully incorporated. Scrape down the sides of the bowl as needed.

Step 5

Mix in the molasses and vanilla extract until combined.

Step 6

On low speed, add the dry ingredients in three additions, alternating with the buttermilk in two additions, beginning and ending with the dry ingredients. Mix just until combined, being careful not to overmix.

Step 7

Slowly stir in the boiling water until the batter is smooth. The batter will be thin, which is normal.

Step 8

Pour the batter into the prepared baking pan, spreading it out evenly.

Step 9

Bake in the preheated oven for 35-40 minutes, or until a toothpick inserted into the center of the cake comes out clean.

Step 10

Remove the cake from the oven and allow it to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

Step 11

Once cooled, frost as desired or enjoy plain for a rustic, old-fashioned treat.
