Ingredients

  • 1 lb Shrimp, peeled and deveined
  • 4 cups Water
  • 1 tsp Salt
  • 2 cups Tomato juice (preferably Clamato)
  • 0.5 cup Ketchup
  • 0.25 cup Lime juice, freshly squeezed
  • 1 tbsp Hot sauce (like Cholula or Tabasco)
  • 0.5 cup White onion, finely chopped
  • 0.25 cup Cilantro, finely chopped
  • 1 small Jalapeño, finely minced
  • 1 cup Cucumber, diced
  • 1 cup Roma tomatoes, diced
  • 1 large Avocado, diced
  • 1 package Tortilla chips or saltine crackers

Directions

Step 1

Bring 4 cups of water and 1 tsp of salt to a boil in a medium pot. Add the shrimp and cook for 2-3 minutes, or until they turn pink and are opaque. Remove the shrimp with a slotted spoon and transfer them to an ice bath to stop the cooking. Drain and set aside.

Step 2

In a large mixing bowl, combine the tomato juice, ketchup, lime juice, and hot sauce. Stir until well mixed.

Add the finely chopped onion, cilantro, jalapeño, cucumber, and diced Roma tomatoes to the bowl. Stir to combine.
