Ingredients

  • 3 cups Fresh corn kernels (from about 4 ears of corn or 3 cups frozen, thawed)

  • 1 small Jalapeño pepper, seeded and minced
  • 0.5 cup Red onion, finely diced
  • 0.25 cup Fresh cilantro, chopped
  • 3 tablespoons Juice of 2 limes
  • 2 tablespoons Olive oil
  • 0.5 teaspoons Ground cumin
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Black pepper

Directions

Step 1

If using fresh corn, shuck the ears and remove all the silk. Bring a large pot of water to boil and add the corn. Cook for 5 minutes, then remove the ears and let them cool slightly. Using a sharp knife, slice the kernels off the cob into a large bowl.

If using frozen corn, ensure it's thawed and pat it dry with a paper towel to remove excess moisture.

In a large mixing bowl, combine the corn (fresh or thawed), diced red bell pepper, minced jalapeño, and diced red onion.

Add the chopped cilantro to the bowl.
