Ingredients

  • 2 tablespoons olive oil
  • 1 large, diced yellow onion
  • 1 large, diced green bell pepper
  • 4 minced garlic cloves
  • 2 pounds ground beef
  • 28 ounces canned diced tomatoes
  • 15 ounces canned tomato sauce
  • 15 ounces canned kidney beans (rinsed and drained)
  • 15 ounces canned black beans (rinsed and drained)
  • 1 cup beef broth
  • 3 tablespoons chili powder
  • 2 teaspoons ground cumin
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • 0.5 teaspoon cayenne pepper
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 tablespoon sugar
  • 0.25 cup fresh cilantro (chopped, for garnish)
  • 0.5 cup sour cream (for serving)
  • 1 cup shredded cheddar cheese (for serving)

Directions

Step 1

Heat a large Dutch oven or stockpot over medium heat and add olive oil.

Step 2

Once the oil is hot, sauté the diced onion and green bell pepper until softened, about 5 minutes.

Step 3

Add the minced garlic and cook for an additional 1-2 minutes until fragrant.

Step 4

Increase the heat to medium-high and add the ground beef. Cook until the beef is browned and crumbled, about 8-10 minutes. Drain any excess fat, if necessary.

Step 5

Stir in the canned diced tomatoes, tomato sauce, kidney beans, black beans, and beef broth.

Step 6

Add the chili powder, ground cumin, paprika, dried oregano, cayenne pepper, salt, black pepper, and sugar. Stir well to combine all ingredients.

Step 7

Bring the chili to a boil, then reduce the heat to low. Cover and simmer for 45 minutes, stirring occasionally to prevent sticking.

Step 8

Taste and adjust seasonings as needed. If a thicker consistency is desired, simmer uncovered for an additional 10-15 minutes.

Step 9

Serve hot in bowls, garnished with chopped cilantro, a dollop of sour cream, and shredded cheddar cheese.
