Ingredients

  • 4 pieces (6 oz each) salmon fillets (skin-on or skinless)
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 3 tablespoons unsalted butter
  • 1 medium honeycrisp apple (finely diced)
  • 2 tablespoons brown sugar
  • 2 tablespoons apple cider vinegar
  • 1 teaspoon fresh rosemary (chopped)
  • 0.5 teaspoon ground cinnamon
  • 1 teaspoon lemon juice

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Pat the salmon fillets dry with a paper towel. Season both sides with salt and black pepper. Set aside.

Step 3

Heat 1 tablespoon of olive oil in a large oven-safe skillet over medium heat.

Step 4

Place the salmon fillets in the skillet, presentation side (non-skin side) down. Sear for 2-3 minutes until golden brown, then flip. Cook for another 2 minutes and remove from the skillet. Set the fillets aside.

Step 5

Reduce heat to low and add unsalted butter to the skillet. Once melted, stir in the diced apple and cook for 3 minutes until softened.

Step 6

Add the brown sugar, apple cider vinegar, rosemary, cinnamon, and lemon juice. Stir to combine and let the mixture simmer for 2-3 minutes until it thickens slightly.

Step 7

Return the salmon to the skillet, spooning the apple mixture on top of each fillet.

Step 8

Transfer the skillet to the preheated oven and bake for 10-12 minutes, or until the salmon is cooked through and flakes easily with a fork.

Step 9

Carefully remove the skillet from the oven and let it rest for 2 minutes.

Step 10

Serve the salmon fillets warm, topped with the apple glaze. Pair with roasted vegetables or wild rice for a complete meal.
