Ingredients

  • 1 pound ground beef
  • 1 medium yellow onion, diced
  • 3 cloves minced garlic
  • 2 tablespoons taco seasoning
  • 14.5 ounces diced tomatoes with green chiles (Rotel or similar)
  • 8 ounces tomato sauce
  • 2 cups chicken broth
  • 8 ounces uncooked pasta shells
  • 1.5 cups shredded cheddar cheese
  • 1 cup sour cream
  • 2 tablespoons chopped fresh cilantro (optional, for garnish)

Directions

Step 1

In a large skillet, heat over medium-high heat and add the ground beef. Cook, breaking it up with a wooden spoon, until browned and cooked through, about 5-7 minutes. Drain any excess grease if needed.

Step 2

Add the diced onion and minced garlic to the skillet with the browned beef. Sauté for 2-3 minutes until the onion is softened and fragrant.

Step 3

Stir in the taco seasoning, ensuring the beef and onion are evenly coated.

Step 4

Pour in the diced tomatoes with green chiles (with their juices), the tomato sauce, and chicken broth. Stir to combine.

Step 5

Add the uncooked pasta shells to the skillet, making sure they are submerged in the liquid. Bring the mixture to a boil.

Step 6

Once boiling, reduce the heat to low, cover the skillet with a lid, and simmer gently for 12-15 minutes. Stir occasionally to prevent the pasta from sticking to the bottom. Cook until the pasta is tender and the liquid is mostly absorbed.

Step 7

Turn off the heat and stir in the shredded cheddar cheese and sour cream until melted and creamy.

Step 8

Garnish with freshly chopped cilantro, if desired, and serve immediately. Enjoy!
