Ingredients

  • 1 cup unsalted butter
  • 1 cup brown sugar
  • 0.5 cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2.5 cups all-purpose flour
  • 1 teaspoon baking soda
  • 0.5 teaspoon salt
  • 1 cup creamy peanut butter
  • 0.75 cup powdered sugar
  • 2 cups semi-sweet chocolate chips
  • 1 tablespoon shortening (optional, for chocolate coating)

Directions

Step 1

In a large mixing bowl, cream together the butter, brown sugar, and granulated sugar until light and fluffy.

Step 2

Add the eggs and vanilla extract to the butter mixture and mix until fully combined.

Step 3

In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet mixture, mixing until just combined. Cover the dough and refrigerate for 30 minutes.

Step 4

While the cookie dough chills, make the peanut butter truffle filling. In a medium bowl, mix the creamy peanut butter and powdered sugar until smooth. Roll the mixture into small balls (about 1 teaspoon each) and place them on a parchment-lined baking sheet. Freeze the balls for at least 20 minutes.

Step 5

Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper.

Step 6

Scoop about 1 tablespoon of chilled cookie dough and flatten it slightly in your hand. Place a frozen peanut butter ball in the center and wrap the cookie dough around it, completely encasing the truffle. Roll the filled dough into a ball and place it onto the baking sheet, spacing each cookie about 2 inches apart.

Step 7

Bake the cookies for 8-10 minutes, or until the edges are set and lightly golden. Avoid overbaking as the centers should remain soft. Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Step 8

Melt the semi-sweet chocolate chips in a microwave-safe bowl in 20-second intervals, stirring in between, until fully melted. If desired, add the shortening to make the coating smoother.

Step 9

Dip the top of each cookie in the melted chocolate or drizzle chocolate over the cookies using a spoon. Allow the chocolate to set completely before serving or storing.

Step 10

Enjoy your Jilldo's Peanut Butter Truffle Cookies with a cold glass of milk or your favorite hot beverage!
