Ingredients

  • 2 lbs Salt beef
  • 6 large Potatoes
  • 6 medium Carrots
  • 1 medium Turnip
  • 1 medium head Cabbage
  • 1 cup Peas pudding bag (yellow split peas)
  • 3 medium Parsnip
  • 2 cups Flour
  • 2 tsp Baking powder
  • 3 tbsp Butter or shortening
  • 0.5 cup Milk
  • 1 pinch Salt

Directions

Step 1

Rinse the salt beef thoroughly to remove excess salt. Soak it in cold water for at least 4 hours or overnight, changing the water once or twice.

Step 2

Place the rinsed salt beef in a large stockpot and cover with cold water. Bring to a boil, then reduce the heat to a simmer. Cook for 90 minutes, skimming any foam off the surface.

Step 3

While the beef cooks, prepare the vegetables. Peel and chop the potatoes, carrots, turnip, and parsnips into large chunks. Cut the cabbage into quarters.

Step 4

If using peas pudding, place the yellow split peas in a pudding bag and tie it securely, leaving room for expansion. Soak the bag in water for a few minutes before adding it to the pot with the salt beef and simmer for an additional hour.

Step 5

After 90 minutes of cooking the beef, add the turnip and carrots to the pot. Simmer for 30 minutes.

Step 6

Add the potatoes, parsnips, and cabbage to the pot. Cook for another 30 minutes or until all the vegetables are tender.

To prepare the dumplings (optional), mix flour, baking powder, salt, and butter or shortening in a bowl. Gradually add milk to form a soft dough. Drop spoonfuls of the dough on top of the simmering vegetables during the final 15 minutes of cooking. Cover the pot tightly and do not lift the lid until the dumplings are cooked through.

Remove the cooked salt beef and vegetables from the pot and arrange them on a large serving platter. Remove the peas pudding bag, mash the peas, and season to taste.
