Ingredients

  • 14 oz (1 can) canned artichoke hearts
  • 8 oz (1 can) canned sliced mushrooms
  • 1 small yellow onion
  • 2 garlic cloves
  • 2 tbsp unsalted butter
  • 2 tbsp all-purpose flour
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 1 tsp dried thyme
  • 0.5 tsp (or to taste) salt
  • 0.25 tsp (or to taste) black pepper
  • 1 tbsp olive oil

Directions

Step 1

Finely chop the onion and mince the garlic cloves.

Step 2

In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté for 3-4 minutes until tender and translucent.

Add the minced garlic and sauté for another minute, being careful not to burn it.

Drain the canned artichoke hearts and sliced mushrooms. Roughly chop the artichoke hearts into smaller pieces, if desired.
