Ingredients

  • 1 medium-sized (about 1 lb) jicama
  • 3 large oranges
  • 1 large lime
  • 1 teaspoon lime zest
  • 2 tablespoons, finely chopped fresh cilantro
  • 2 tablespoons olive oil
  • 1 teaspoon honey
  • 0.5 teaspoon salt
  • 0.25 teaspoon ground black pepper

Directions

Step 1

Peel the jicama using a sharp knife, removing both the tough outer skin and the fibrous layer underneath. Dice the jicama into small bite-sized cubes (about 1/2 inch).

Step 2

Peel the oranges, ensuring that all the white pith is removed. Segment the oranges by slicing between the membrane of each segment or simply cut them into thin rounds.

Step 3

In a small bowl, combine the zest and juice of 1 lime, 2 tablespoons of olive oil, 1 teaspoon of honey, 0.5 teaspoon of salt, and 0.25 teaspoon of ground black pepper. Whisk until well emulsified.

Step 4

In a large salad bowl, toss the diced jicama and orange segments together.

Step 5

Drizzle the lime dressing over the jicama and oranges, and toss gently to coat.

Step 6

Add the finely chopped fresh cilantro to the salad and toss lightly once more.

Step 7

Serve immediately, or cover and chill in the refrigerator for 15 minutes before serving for an extra-refreshing experience.
