Ingredients

  • 4 medium Russet potatoes
  • 1 large Yellow onion
  • 2 large Eggs
  • 0.25 cups All-purpose flour
  • 1 teaspoons Salt
  • 0.5 teaspoons Ground black pepper
  • 0.5 cups Vegetable oil
  • 1 cups Applesauce (optional, for serving)
  • 1 cups Sour cream (optional, for serving)

Directions

Step 1

Peel the potatoes and the onion. Grate them using a coarse grater or a food processor with a grating disk.

Step 2

Transfer the grated potatoes and onion to a clean kitchen towel. Wrap the towel tightly and squeeze out as much liquid as possible. Discard the liquid.

Step 3

In a large mixing bowl, combine the grated potatoes and onion with the eggs, flour, salt, and black pepper. Mix until well combined.

Step 4

Heat the vegetable oil in a large skillet over medium-high heat. The oil should be about 1/4 inch deep and shimmer when heated.

Step 5

Spoon 2 to 3 tablespoons of the potato mixture into the hot oil for each latke. Flatten slightly with the back of the spoon to form thin, patty-shaped latkes.

Step 6

Fry the latkes for 3 to 4 minutes on each side, or until they are golden brown and crispy. Adjust the heat as needed to prevent burning.

Step 7

Transfer the cooked latkes to a plate lined with paper towels to drain excess oil. Continue frying in batches until all the mixture is used.

Step 8

Serve the latkes warm with applesauce, sour cream, or both on the side for dipping.
