Ingredients

  • 1 pound ground beef (or lamb for a traditional version)
  • 2 tablespoons olive oil
  • 1 large yellow onion, finely chopped
  • 2 medium carrots, diced
  • 1 cup frozen peas
  • 2 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 2 tablespoons all-purpose flour
  • 1 cup beef broth
  • 2 teaspoons Worcestershire sauce
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 pounds russet potatoes, peeled and diced
  • 4 tablespoons butter
  • 0.5 cup milk
  • 0.5 cup shredded cheddar cheese (optional, for topping)

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Peel and cube the russet potatoes. Place them in a large pot, cover with water, and bring to a boil. Cook for 15-20 minutes, or until the potatoes are fork-tender.

Step 3

While the potatoes cook, heat olive oil in a large skillet over medium-high heat. Add the ground beef (or lamb) and cook until browned and crumbled. Drain any excess fat.

Step 4

Add the chopped onion, diced carrots, and peas to the skillet. Cook for 5-7 minutes until the vegetables are softened. Add minced garlic and cook for 1 additional minute.

Step 5

Stir in the tomato paste and flour. Cook for 1-2 minutes to eliminate the raw flour taste.

Step 6

Slowly pour in the beef broth while stirring. Add Worcestershire sauce, salt, and black pepper. Bring to a simmer and cook for 5 minutes until the mixture thickens. Remove from heat.

Step 7

Drain the potatoes and return them to the pot. Add butter and milk, then mash until smooth and creamy. Season with a pinch of salt to taste.

Step 8

Spread the cooked meat and vegetable mixture evenly into the bottom of a 9x13-inch baking dish.

Step 9

Spoon the mashed potatoes over the meat mixture, spreading it evenly to cover the entire surface. Use a fork to create ridges on top for extra texture.

Step 10

Optionally, sprinkle shredded cheddar cheese on top for a golden, cheesy finish.

Step 11

Bake in the preheated oven for 20-25 minutes, or until the top is golden and slightly crispy.

Step 12

Allow the Shepherd’s Pie to cool for 5-10 minutes before serving. Enjoy your hearty, comforting meal!
